What You Need
1 pound of chicken breast
Olive oil
Bunch of Cilantro ( they usually have it in a bunch at the store) – chopped roughly
pinch of salt
1/2 teaspoon of pepper
1/2 teaspoon of garlic powder
1/2 teaspoon of red pepper flakes
What To Do
In a blender combine – cilantro, salt, pepper, garlic powder, red pepper flakes, and about 1/3 cup of olive oil. Please note it might take a little more olive oil
It should look almost a pesto
In a ziploc bag place chicken and cilantro marinade
Let chicken marinate for at least 1 hour before cooking ( cook anyway you like 🙂 )
Goes perfectly with rice — this dish is completely gluten free
Enjoy!

This looks so delicious! I love cilantro and the marinade sounds really good. I would probably end up baking the chicken. How did you cook the chicken for this recipe?

Perfect, this will go great with my Cilantro addiction.

Just made this, and it was delicious! I baked it at 450 for 40 minutes, and it came out nice and juicy. I worried that the cilantro would be overwhelming, but it was a very nice level (as long as you like cilantro, of course).

This recipe is very simple, and quite tasty. Hubby and I did have to sprinkle a little sea salt on our’s and after that little addition it was delicious! I think next time I will throw some fresh garlic in there to kick up the flavor some more. We chose to grill the chicken and it came out great!

Just cooked this for the first time today, and LOVED it. I added more salt, pepper, and garlic powder, but it was great. The grill ran out of gas, so I browned the breasts on the stove top for five minutes (on each side), before moving it to the oven for 15 minutes at 410 degrees.
